Gloom Stalker multiclassing with either Thief or Bard is both extremely strong. Normally in DND5 its Assassin but with Thief extra BA being so OP in BG3 its usually the better choice. Dipping into Fighter 2 or 3 is also strong but at some point the opportunity cost is also very high.

Thief is a lot better than assassin. Go 5 Gloom - 4 Thief - 3 Gloom and get your last ASI. You especially gimped yourself not capping dex. You cap Dex after this fight via the mirror. Thief loses the whole point of gloomstalker so you should just use hunter. The point of gloom is to combine with the assassin first round abilities.

Personally i feel like in a vaccum, ranger knight is the best one, but since the best heavy armor in bg3 right now is a 16 ac armor this is a trap choice. For gameplay useage i would say Mage Breaker and Sanctifed Stalker are on par with each other. Since both give a situational cantrip.
